Fattoush with Feta Cheese AKA “The Best Salad in the World”
There are two highlights to this salad: the first is za’atar seasoned pita chip croutons and the second is copious amounts of fresh herbs mixed with the lettuce.
4 tbsp. za’atar*
1/3 cup olive oil
3 pita rounds torn into 1” pieces
Mix za’atar and olive oil together and drizzle over pita pieces
Bake at 350 degrees on parchment paper until golden and crisp. Set aside to cool.
3 tbsp. lemon juice
2 tsp. honey
3 tbsp. olive oil
1 tbsp. za’atar
Whisk dressing ingredients together in large bowl
1 romaine heart cut into ½” pieces
1 small red onion thinly sliced
2 cucumbers, seeded and cut into ½” pieces
1 cup halved cherry tomatoes
1 cup cilantro leaves
1 cup parsley leaves
½ cup torn dill
½ cup mint leaves
Add salad greens to dressing bowl and toss.
Season with salt, pepper.
Add pita chips.
Add crumbled feta cheese.
*Za’atar is a mixture of herbs that can be purchased in a Middle Eastern store. You can also prepare your own. The following recipe for za’atar is from Epicurious: 2 tablespoons minced fresh thyme, 2 tablespoons sesame seeds, toasted, 2 teaspoons ground sumac, 1/2 teaspoon coarse salt.
We are told, no sumac on hand, no problem. You can substitute lemon zest plus salt OR (in salads) lemon juice OR (in salads) vinegar.
