Marge’s Avocado Citrus Salad
The recipe below is a variation of Marge’s Avocado Citrus Salad that she traditionally prepared each Christmas. In the original version, Marge used red wine vinegar in place of the lime juice, and fresh oregano in place of the cilantro leaves. And being of Sicilian decent, of course black olives.
8 oz. baby lettuce or leaves cut into bite size pieces
1 large ripe Hass avocado
3 navel or blood oranges
1 small red onion, sliced
1/4 cup cilantro leaves, coursely chopped
Juice of 1 lime
1 tbsp. extra virgin olive oil
1/4 tsp. kosher salt
1/4 tsp. freshly ground pepper
Spread a thin base of lettuce on each plate or serving platter; add avocado, orange, and onion slices; scatter cilantro on top. Drizzle with lime juice and olive oil, then season with salt and pepper.
This salad can be served with or without the bed of your favorite lettuce. Baby butter lettuce is a perfect choice; and blood oranges are beautiful and delicious when in season.
