Happy Birthday Hummingbird Post! There's even a cake named for this honorary occasion...seriously.
In 1978, Mrs. L.H. Wiggins from South Carolina won first place in a baking contest for her Hummingbird Cake. Soon afterwards, Mrs. Wiggins submitted her recipe to Southern Living Magazine, and it took off. It's a spice cake loaded with crushed pineapple, ripe bananas and toasted pecans, then iced with a traditional cream cheese frosting. A sugar tower indeed for hummingbirds!
