"Zesty" Grilled Swordfish

Two ingredients and delicious.  That's my kind of recipe!

2 swordfish steaks, approximately 5 oz. each

"Zesty" Italian salad dressing*

Place swordfish steaks in a non-reactive dish.  Pour dressing over swordfish.  Cover dish and refrigerate for approximately 1 hour, turning once to allow both sides of the fish to marinade.

Oil grill and heat to a medium high heat.

Remove swordfish steaks from the marinade and grill for approximately 5 minutes per side, based on the thickness of your steaks.  Swordfish should be cooked through, but not overcooked.  Remove from the grill when there is no pink in the middle of the steak.  Cover with aluminum foil and allow to rest for 5 minutes before serving.  

Serves 2.

*I usually use store bought "Zesty" Italian salad dressing, as it makes this such an easy, delicious dish to prepare for 2, or for a crowd.  I have prepared the swordfish making homemade dressing for the marinade, which I load up with Italian herbs, and truth be told, it is just a "tiny" bit better.
