Eggless Brownies

This is SCRUMPTIOUS and easy to make!

This recipe goes into the “fun” chocolate lovers category.  It brings back memories of being a kid, and the notions that: 1)  there’s no such thing as too much chocolate, and 2) chocolate "makes everything better."

2/3 cup flour

¼ tsp. baking soda

¼ tsp. salt (if desired)

½ cup sugar

2 tbsp. butter or butter substitute

5 tbsp. water, divided

3 tbsp. vegetable oil

1 tsp. vanilla extract

2 tsp. baking powder

2 cups (approximately 12 ounces) Hershey’s milk chocolate kisses, unwrapped, divided

½ cup dark chocolate M&Ms (if desired)

Preheat oven to 325 degrees. Grease 9-inch square baking pan.

In bowl, stir together flour, baking soda and salt. In medium saucepan, combine sugar, butter and 2 tablespoons water. Cook over low heat, stirring constantly, until mixture comes to a boil.

Remove from heat, immediately add 1 cup kisses, stirring until melted. Stir in 3 tablespoons vegetable oil, 3 tablespoons water, 2 teaspoons baking powder and 1 teaspoon vanilla extract, until blended.

Gradually add flour mixture, blending well. Stir in remaining cup of kisses and the M&Ms. Pour batter into prepared pan. Bake 30 minutes, even though the batter may appear to not be set at that point. Cool completely in pan on wire rack. The brownies may sink as they cool. Once cooled, cut into squares. If you like the warm gooey uncooled brownie, you can dig in before they are completely cooled. 

Yields about 18 brownies.   Prep time about 15 minutes, allow 30 minutes cooking time
