Pumpkin Cake Squares
Holidays are so much based on traditions, but personally, my family was not really known for its Thanksgiving recipes. We typically did a hearty pasta dish, followed by a turkey soup, made with tiny meatballs, and finally the American turkey feast, which I was never crazy about. I was never a big fan of pumpkin pie either, so my mom found a pumpkin cake recipe from Woman’s Day magazine that she would make for me and I have made on Thanksgiving ever since because it’s delicious and easy!
1 cup sugar
2 large eggs
1 cup Canned Pure Pumpkin
½ cup canola or vegetable oil
1 cup all-purpose flour
1 tsp. cinnamon
1 tsp. baking soda
½ tsp. baking powder
½ tsp. salt
Frosting
¾ cup confectioners sugar
¼ cup cream cheese
2 tbsp. butter, softened
½ tsp. vanilla extract
Preheat oven to 350 degrees and grease a 9” square pan
In a mixing bowl, beat sugar and eggs on medium speed for 2 minutes. Beat in the pumpkin and oil. Add flour, cinnamon, baking soda, baking powder, and salt; beat for 1 minute.
Pour batter into the prepared pan. Bake 25 to 30 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.
Prepare frosting. Mix at a low speed for 2 minutes – confectioners sugar, cream cheese, butter, and vanilla. Frost cake when cooled.
