Lagita’s Quick Apple Cake

Lagita’s Quick Apple Cake, quick and delicious, is an old favorite recipe that is presented and reviewed on many food sites. The recipes are all very true to this one. No one seems to know Lagita… though we thank her for this recipe, perfect for fall with so many types of apples widely available.

3 C tart apples, such as granny smith, fuji, peeled, cored, and thinly sliced
1 tsp fresh lemon juice
3/4 C, plus 3 tbsp granulated sugar
1 1/2 - 2 tsp ground cinnamon
3/4 cup ( 1 1/2 sticks) unsalted butter cut into pieces
2 eggs lightly beaten
1 C sifted all-purpose flour
Vanilla ice cream, one scoop per serving, optional but recommended

Preheat oven to 350 degrees. Butter a 10 inch pie plate.

Toss the apples in a bowl with lemon juice, 2 tbsp sugar, and cinnamon. Spread mixture in prepared pie plate.

Melt the butter in a small saucepan over medium heat. Cook until lightly golden brown, approximately 5-7 minutes. Watch carefully to avoid burning.

Pour the clear brown butter only into a bowl, leaving the sediment and foam behind in the pan. (The sediment particularly will create a bitter taste, so it is important not to include in the batter.) Add 3/4 C sugar and gently stir in the eggs.

Stir in the flour until blended. Spoon the batter over the apples, spreading into a top layer. Sprinkle remaining 1 tbsp of sugar over the top of the batter.

Bake until golden and the top of the cake becomes lightly crusty, approximately 40-45 minutes.

Cool in the pan on a wire rack. Cut into wedges and serve warm or room temperature with a scoop of vanilla ice cream.
