Baked Cod with Onion Rings

It doesn’t get much easier than this! In fact, during our recent heat wave, I prepared this recipe for 2 in my toaster oven so I wouldn’t heat up the kitchen! Don’t be dissuaded by these easy and everyday ingredients. They marry deliciously!

4 cod fillets (one per serving)

mayonnaise

fresh herbs, chopped (optional)

French fried onion rings

Preheat oven to 350 degrees. Place cod fillets, skin removed side down in buttered baking dish.

Spread an even coating of mayonnaise over the top of each fillet. If you really want to go all out, grab some fresh herbs from your garden, chop, and mix into the mayonnaise prior to spreading!

Sprinkle GENEROUSLY with French fried onion rings. I use French's brand.

Bake at 350 degrees for 25 minutes. The cod should be cooked through, yet flaky and moist. You might need to adjust the baking time slightly based on your oven.

Note: You can use any thicker fillet of fish for this recipe... or chicken if you are not a seafood lover, adjusting the cooking time accordingly.
