Sarah’s Grapefruit & Avocado Salad
Dressing
Blend together the following ingredients. I use an immersion blender.
3 tbsp. honey
1/3 cup apple cider vinegar
1/4 cup EVOO
1/3 cup mayo
2 tbsp brown sugar
1 tsp. salt
1/4 tsp. black pepper
1 tbsp. minced shallots for more savory dressing—optional
Salad
4 cups of pink grapefruit sections (approximately 4 cups peeled and de-membraned sections—either purchase pink grapefruit sections (4 cups) or de-skin and de-membrane 4 fresh grapefruit.
2 avocados (or more)
1 pkg. of pre-washed fresh baby spinach
Add grapefruit sections (and juice) to bowl.
Shortly before serving dice avocados into bowl and dress with 3 tbsp. of dressing; add more to achieve desired coverage
Place a a generous handful of fresh baby spinach on each salad plate and heap the grapefruit-avocado mixture on top.
Consider topping with red onion, chopped cilantro or jicama.
Serves 4
Extra dressing can be stored in the refrigerator for one week.
