Glazed Shallots and Mushrooms
A simple accompaniment to any meat or poultry, this dish takes one pan and few ingredients.
6-8 whole shallots, peeled and trimmed
1 carton crimini mushrooms, stems trimmed and cleaned
1 tbs Sherry vinegar
1 tsp brown sugar
Pinch of dried thyme
Freshly ground black pepper
Preheat oven to 400ºF. Toss the shallots and mushrooms in olive oil to coat. Place in a 10-inch ovenproof skillet on the top shelf of oven for 20 minutes or until starting to brown.
Add vinegar, sugar, thyme and pepper and toss well. Place pan on top burner of stove over medium heat and, stirring occasionally, finish cooking.
The shallots should be deep gold and the mushroom well-browned.
Serves 2-4, depending on appetites.
