Just Folks. String Bean Casserole.

If you grew up in the 50s and 60s this recipe will bring back some great memories. Then, the trend was convenient, easy, one-pot delicious--it was high times for the casserole. The casserole allowed frugal and inventive "homemakers" to incorporate their leftovers into something new--think Turkey Tetrazzini and its many iterations (don't forget the peas!).
But casseroles were a "thing" unto themselves, allowing pre-prep and portability. Perfect for pot luck dinners and such. Dorcas Reilly of Haddonfield, NJ invented the String Bean Casserole in 1955 when she worked in Campbell's test kitchen and home economics department. Her job was to help create recipes that could be printed on product labels and this one was an immediate hit! In 2002, the recipe was donated to the National Inventors Hall of Fame. Although Dorcas Reilly passed away in October, 2018, her iconic casserole, also named "an ultimate comfort food," will endure as a Thanksgiving tradition! In today's culinary world of fresh, non-processed ingredients, really, when else would you get your hands on a can of French's Fried Onion Rings?
