Blueberry-Coconut Gelato by Tina Folks was selected as one of the Pure Imagination pieces that will be exhibited at the The FireFlyArtists' Gallery, Northport, LI!

This juried exhibition celebrates desserts, sweets and everything delicious! The show is a collaboration with the Community Playhouse of Northport that is also celebrating the Playhouse’s current production of Roald Dahl’s Willy Wonka.

I’ve always remembered the first time I tasted gelato. It was in the early 1980s while I was a student living abroad in Florence, Italy.  Its  vibrant color, flavor and texture was not of this world!  This "dolce Italiano" tasted like pure, bright silken fruit, and nothing more. It made my cheeks pucker! We frequented a gelateria near the Piazza del Duomo, located in the center of the city. While I was working on  Blueberry-Coconut Gelato, I started to reimagine my experience as a student in Italy when I was learning the language and getting around. Among so many memories, my senses started filling up with the familiar mix of Florence’s city sounds and smells. Remembering the old cracked sidewalks, my walk to school, our favorite coffee bar on the corner, the street musicians, all marbled in with the smell of espresso and the exhaust from tiny cars and auto-buses. Then of course, the aroma of warm cones wafting through the narrow streets  as we approached our favorite gelateria for a fix. Personally, I’ve always preferred sorbet over ice cream. And Italian gelato is it!

An Italian friend of mine, who is “in the know” gave me a tip which will help you with this recipe. Use fruit that is over-ripened or just past its peak as it contains the most sugar, juice and flavor. Buon Appetito Tutti!
