Best Burger Grilling Tips from the Masters

While searching for the “best hamburger” I wound up with a top 10 grilling tips list sourced from a variety of Master Chefs. I know we’ll all be dragging those grills out soon enough, if you haven’t already. Hopefully this will give you a leg up on your first of the season hamburger foray!

  1. Keep the chopped meat cold until ready to grill

  2. Season formed burgers liberally with salt and pepper

  3. Use 80/20 ground beef

  4. Burger size— recipes ranged from 1/4 pound to 1/3 pound however all agree, it should at least be the size of the bun

  5. Depress the center of the burger leaving a perimeter that is thicker.. This adds to juiciness and prevents the center of the burger from puffing up/rounding while grilling

  6. Grill burgers 5 minutes total for medium burgers, flipping once

  7. Flip, DON’T PRESS the burgers!

  8. For cheeseburgers, add cheese one minute prior to finish

  9. Toast buns at the same time off to the side, indirect heat. Butter the buns before toasting (I didn’t know that!)

  10. Rest the burgers for 1 minute before serving. I rest ours on the bottom of the bun which absorbs the juices.

Note: Some recipes call for adding herbs and other ingredients to the meat mixture, but the purists go for salt and pepper on the formed burgers prior to grilling. All agree to keep the chopped meat cold and don’t over handle the burgers when forming them.
