Recipe. You Won't Want to Miss This!

Quinoa with Cranberries & Pistachios

A Light and Delicious Side Dish or Base for a Hearty Meal. I start by preparing the quinoa in a saute pan, so I can add all the ingredients to the quinoa without using extra bowls, etc. Easy!

1.5 cups dry quinoa

1 orange zested and juiced

1/2 lemon juiced

1/4 cup olive oil

1/2 cup dried cranberries

1/2 cup shelled pistachio nuts

1/2 cup chopped scallions

1/2 tsp. dijon mustard (add more to taste)

2 pinches of salt (add more to taste)

1/4 tsp. freshly grated pepper (add more to taste)

Rinse quinoa. Add to saute pan with 3 cups of water, a drizzle of olive oil and a pinch of salt. Cover and bring contents to a boil.

When it reaches boiling, stir, cover, and reduce heat to low and simmer for approximately 20 minutes, until water is absorbed. Remove from heat and let quinoa sit covered for 5 minutes. Remove cover, fluff, and allow to cool. All ingredients can be mixed together and served from this point forward.

Add cranberries, pistachios, and scallions and toss.

In a jar, add orange zest, fresh orange and lemon juices, mustard, salt and pepper. Shake to mix. Add olive oil and shake again to mix well. When you are ready to serve, pour dressing ingredients over quinoa and mix with a large spoon, making sure that the dressing is evenly distributed. This dish can be served warm or cold. Delicious as a side dish or as the base for a quinoa bowl meal, topping with your favorite vegetables, salad, and/or protein.

Serves 6 as a side dish.
