Turkey Burgers
Sarah says that these are the "best turkey burgers EVER," and that she can go no longer than 10 days without one--year round! Hummingbird says we love a "gourmet" burger where every ingredient is available with one local grocery stop. Perfect!
1 lb ground turkey
1 medium diced onion
1 minced garlic clove
2 cups fresh finely chopped spinach
½ cup crumbled feta cheese
Salt & pepper to taste
Extra Virgin Olive Oil (EVOO)
3 brioche hamburger rolls
For Sauce: pulse ingredients together in a blender and set aside.
1 ½ tbsp. canned chipotle chilies with adobo sauce
2 tbsp. mayonnaise
1 tbsp. India relish
½ tsp. Worcestershire sauce
Sauté diced onion in 2 tbsp. of EVOO on low heat until caramelized (7-10 minutes). Add chopped spinach and garlic and sauté until both are cooked (3 minutes). Let cool.
Place ground turkey, feta cheese, salt and pepper in mixing bowl. Add cooled spinach and onion mixture and mix thoroughly. Make three equally size burgers. Refrigerate for 15 minutes.
Heat a cast iron or other heavy skillet over a medium flame/burner. While your pan is heating, place a small amount of oil in the center of the skillet, and spread it to coat the pan so the turkey burgers won’t stick. (A paper towel is good, so you have a thin, even coating.) If you are grilling, prepare your grill to medium heat. For both methods, cook turkey burgers to 165 degree internal temperature (6-7 minutes per side). Leave the burgers alone, flip only one time.
Grill/heat brioche rolls, and serve with chipotle mayo sauce.
Serves: Three 5.3 oz turkey burgers
