Grilled Tuna with Ginger-Sesame Sauce
With summer breathing down our necks, (YAY!) Hummingbird asked Jay Miller for a summertime barbecue favorite. Jay says that he looks forward to summer grilling, when his family enjoys the bounty of locally sourced fish. Here is one of his quick and easy specialties.
3 finely chopped scallions
1 tbsp minced fresh ginger
1 minced garlic clove
2 tbsp sesame oil
¼ cup hoisin sauce
¼ cup of lemon juice
2 tbsp balsamic vinegar
2 tbsp soy sauce
3 tbsp toasted sesame seeds
2 tbsp chopped coriander
4 tuna steaks, 6-7 ounces each, about 1 inch thick
Stir fry the sauce ingredients and set aside.
Preheat oiled grill to moderately high heat.
Season tuna with salt and pepper and grill for 2 or 3 minutes per side for rare, longer for well done as you like.
Serve with warm sauce on the side.
The Ginger-Sesame Tuna pairs well with coconut rice.
Local asparagus is in season and delicious, and would also be an excellent side dish. We usually grill vegetables prior to cooking the main course and set aside. Just a drizzle of extra virgin olive oil and your favorite salt is all you need!
